jammin' Bars - bar cookies

yield: 25 cookies 1 1/2 * 1 1/2 inch each
1 cup- packed brown sugar
1/3 butter or margarine
1 egg
1/2 teasppon vanilla extract
1/4 salt
3/4 peach or apricot
method:
1. preheat oven to 375 Fahrenheit. lightly grease an 8*8*2 inch baking pan.
2. in a medium bowl, cream brown sugar and butter until light and fluffy.
3. add an egg and vanilla. beat until blended.
4. stir in flour, oats, and salt until combined.
5. reserve 3/4 cup of batter. press remaining batter evenly into prepared pan.
6. spread jam or preserves over batter. drop tablespoonfuls of reserved batter over jam.
7. bake 25 to 27 minutes or until lightly browned.
8. cool on wire rack. slice into 1 1/2 * 1 1/2 inch squares.
